Fujii san’s family has a long history of crafting sake in Japan for six generations. It all started in 1600, when his ancestors moved to Usuki city where they served the Inaba emperor and family. The Inaba family was from the Gifu prefecture and Fujii san’s ancestors were granted Usuki land as a reward for the success at the Battle of Sekigahara. After retirement, they became farmers and began making sake.
There is a strong connection between Usuki city and how much they value the ocean and its importance in their life. Fujii san carries on this legacy with his beautifully hand-crafted Fujii Shuzo Style junmai daiginjo sake. The deep connection between the purity of the ocean and the honed art of brewing premium sake made the perfect debut varietal for SĀFU SAKE.
Made from water drawn from the Ōno River and Yamaguchi. Yamadanishiki rice milled down to 50% for extreme purity, SĀFU SAKE is well-structured in flavor with aromas of melon, pear and hints of rose that burst on your palate mid-sip and smoothly vanish, finishing bright and clean. This varietal of SĀFU SAKE pairs well with fresh tuna, seafood, cheese, oysters and beef.
